12” (or bigger) high sided sauce pan or 6 qt+ stew pot
1lb. Italian Sausage
½-1 lb ground meat (or all sausage if you like)
1 med to large onion
2-4 cloves crushed garlic
2T pasture butter
- Begin browning onions & garlic in butter over medium-low heat but very soon…
Do you have any fresh basil or oregano or marjoram – I use ¼ – ½ cup of fresh herb, then
- Whatever you use fresh, add the other dried herbs in the following amounts..
1T oregano &/or 1T marjoram &/or 1T basil
¼- ½ t Cayenne (more or less, to taste) or ½ – 2 T red Anaheim chili flakes
1t ground fennel
1/8 t cinnamon
1/8 t clove
Add additional butter, as needed….
Keep browning, but very soon add….
Now, what veggies do you have in your ‘fridge???
Zucchini, mushrooms, peppers (sweet &/or spicy-Anaheim, poblano), broccoli, cauliflower, turnips, greens (spinach, turnip, chard, kale, mustard, leaf lettuce)…. Any mix of these works great…. Chop up to 2-3 cups total
- Add chopped veggies
- Add ¼ to ½ cup red or white wine or ¼ cup balsamic vinegar
- Add 3 cups diced tomatoes or one large can of diced or crushed tomatoes
- Braise-Simmer all for 20 mins, ….
- Add meat, stir/simmer/stir – 20 more min salt to taste,
Turn off heat – garnish w/ 1cup – 1 pint of heavy (whipping type) cream, ½ cup olive oil and ½ cup grated Romano or Parmesan cheese.
Serve like a stew/ a bit of fresh grated cheese on top.
